According to preliminary studies, there are some potentially health promoting ingredients in eggs that may help stave off macular degeneration, the leading cause of blindness in adults older than 65. Specifically, the carotenoids found in egg yolks (the antioxidants lutein and zeaxanthin) also make up large portions of macula (the central back portion of the retina that is responsible for seeing fine print). While eggs are not as rich a source of lutein and zeaxanthin as dark leafy green vegetables, such as spinach, the lutein and zeaxanthin in egg yolks seem to be atleat three times more bioavailable. That means that the body absorbs more of both these antioxidants from eggs than it does from leafy greens.
