Karmina serves up tastes of traditional Mexico in new gourmet a la carte eatery

MANZANILLO, Mexico (Nov. 18, 2005) – Manzanillo’s top all-inclusive resort returns to its roots with a new gourmet a la carte bistro, Habanero, which features the exciting flavors of traditional Mexico.

“The whole idea was to bring the tastes and flavors of authentic Mexico to Karmina in an elegant and upscale setting,” explains food and beverage manager Jaume Romagosa. “Adding our unique flair to traditional recipes puts Karmina’s distinctive stamp to dishes that may be old favorites for many of our Mexican guests and new discoveries for our American and Canadian friends.”

Habanero, named after a spicy chili used in many traditional dishes, is open for sit down, reservations-only dinners six nights a week from 7 p.m. onward in the restaurant known as The Grill in the middle of Karmina’s eight interconnected waterfall swimming pools. Woven reed chandeliers sway in the open night air and live music sets the romantic mood as guests dine on delicacies such as tortilla soup with all the fixings, five different types of tamales, and smoked swordfish with fresh avocado and mint under the stars on the patio or beneath a soaring thatched palm roof.

Recipes that take on a twist to the norm include: the quesadilla sampler with squash blossom, huitlacoche mushroom and epazote with zucchinis; the seafood stuffed chile relleno with a coconut “nogada” sauce; barbacoa de borrago, a traditional barbequed lamb dish baked in a wood burning oven in “mixiote” (agave leaf) with a morita chili sauce; and costillitas pibil, baby back ribs marinated, basted and baked with a special “pibil” sauce (a mixture of “achiote” spice, lipstick tree or annatto, and orange juice) served with a jicama slaw and black beans.

Habanero Mexican Bistro joins two other onsite a la carte restaurant options: the Carioca international fare dining room on a cliff overlooking Karmina’s private cove and the lights of the Manzanillo port; and La Trattoria Italian Bistro on the outdoor terrace at Bugambilias restaurant. All three evening restaurants feature exciting live musical entertainment. In addition, nightly themed parties with buffet dinners and glitzy evening gala shows in the events garden or Mayan amphitheater round out the choice of dining options, and 24-hour room service at no additional cost ensures no one goes hungry.
