Mark your calendars for this Monday, December 18, 2006. ‘The Virtuous Women’, Dr. Taffy Wagner and Ms. Bettye Jamerson, break bread with a registered dietician and executive chef on the Literary Corner.

Southern ‘soul food’ gets a healthy makeover in The Family Style Soul Food Diabetes Cookbook. The American Diabetes Association has given ‘two thumbs up’ to this cookbook which takes southern standards such as collard greens, sweet potatoes and coleslaw from unhealthy to diabetic-friendly. Dr. Taffy and Bettye discuss with their guests the challenges African Americans and Southerners face regarding their diet and the plague of obesity and diabetes in these populations.

Registered dietician Fabiola Gaines talks about the importance of portion control, getting active, and modifying one’s diet to manage diabetes. “I call Diabetes an assassin. It takes out your eyes, your heart, your legs, your kidneys…and that’s what you don’t want to happen with this disease,” comments Gaines.

This cookbook lists the exchanges, calories, total fat, cholesterol, sodium and carbohydrates with each recipe. Simple cooking substitutions make very little difference to the taste and flavor but a world of difference to your health. Executive chef Shaun Fralin sums it up: “When you respect food, food will respect you.”
