Denver, CO, May 2005—34°, importer and marketer of specialty foods and indigenous flavors from Australia and New Zealand, announces the arrival of four new cheeses from Tasmania: Red Square, C2, TOM and OEN.

Celebrated for its pure beauty, Tasmania is a force of nature with its abundant wilderness, clean air, fresh water and healthy soil. “Part of what makes Tasmanian cheeses so special is the environment on the island in south Australia,” says Craig Lieberman, 34° founder. “It is a truly unspoiled place, where the animals graze in pristine pastures and the milk they produce is rich and perfect for making cheese. As a result, the cheeses—even the hard cheeses—have this wonderfully high moisture content.”

Recognized as one of Australia’s most dynamic cheese producers, Bruny Island Cheese Co. crafts three outstanding selections: TOM, a hard cheese made in the tradition of the tomme cheeses from the mountainous Savoie region of France; C2, a classic cooked curd cheese that is aged for six to 12 months until it develops a sweet aroma and mild nutty flavor; and Oen, a washed rind, handmade cow’s milk cheese that is washed in Australian pinot noir before it is wrapped in vine leaves to age for eight weeks.

“All eyes are on Nick Haddow, the cheesemaker for Bruny Island,” observes Lieberman. Haddow is a highly respected Australian cheesemaker who trained in the European tradition at London’s Neal’s Yard Dairy and other acclaimed cheese houses. “What I love about his cheeses is that they honor the European tradition, while at the same time they exude this distinctly Australian charm through the use of fresh ingredients like Tasmanian cow’s milk, Australian sea salt and pinot noir.”

Red Square, a creamy washed rind cheese from Tasmanian Heritage, has been consistently named “Best Australian Washed Rind Cheese” in Australian cheese competitions. The cheese, which is washed in Australian red wine, has an earthy golden rind and a rich dense interior with a full aroma and distinctive flavor. “Red Square is a perfect example of what we’re finding with the cheeses from Australia,” notes Lieberman. “It’s got tremendous flavor and that characteristic rich creaminess.”
