Ambrosia Executive Chef Michael Rossi Invited to Join Fraternity of Côtes of Bordeaux

The 5-star Ambrosia Restaurant (www.ocpavilion.com) is pleased to announce that Executive Chef Michael Rossi has been invited to return to France on behalf of the Jean-Louis Palladin Foundation to become a member of the Fraternity of the Côtes of Bordeaux Wine Council.

Chef Rossi’s invitation into the fraternity is related to his acceptance into the JLP Foundation program for chef’s in 2005, part of the collaboration between the JLP Foundation and the Côtes of Bordeaux Wine Council. Rossi was accepted from a pool of applicants that year to be the second chef accepted into the program. The foundation covered all expenses for Rossi to train with winemakers in France’s Côtes of Bordeaux wine region. He traveled to Bordeaux for 10 days, visiting 4 winemaking châteaus each day to understand the winemaking and viticulture process.

The program seeks to train top chefs around the world the principles of seasonality as related to quality of fine foods and to foster an exchange of ideas between French and American culinary life. Chefs get the opportunity to gain a better understanding of how the seasons affect the fruits, vegetables, livestock and fish from around the world, and how sourcing these ingredients benefits cuisine. Some of the world’s best chefs are involved in the foundation, which was launched in honor of famous international chef, Jean-Louis Palladin.

Chef Palladin is considered one of the culinary geniuses of the 20th century. In 1974, at 28 yrs old, Jean-Louis won 2 Michelin stars for his restaurant Tables Des Cordeliers in Gascony, France. At the time he was the youngest chef to have won 2 stars. He is credited with creating a brotherhood among chefs and raising the level of cuisine in America. He passed away at the age of 46, due to complications from cancer.

The Jean-Louis Palladin Foundation was incorporated in June 2002 to serve as an ongoing tribute to the memory of Chef Jean-Louis Palladin. The goal is to create a memorial to his career of uncompromising determination to seek out and use the best ingredients, mentor talent wherever he found it, and encourage creativity among chefs.

The Ambrosia Restaurant is located in the OC Pavilion performing arts center in historic Santa Ana. Executive Chef Michael Rossi has received acclaim in the press for his menus that honor the seasonal marketplace and showcase the finest offerings of the season.
