Solitude Ski Resort Hires Eklunds to Manage European Village

October 2007, BOSTON, MA – Restaurateurs and culinary experts Staffan and Kimi Eklund have been appointed by the Solitude Ski Resort in Salt Lake City, UT as the new managers to their five restaurants and private club at the resort’s European Village. They are charged with enhancing the atmosphere and culinary options at the resort and bringing a more honest European flare to the European Village.

The Eklund’s have previously owned two very successful restaurants in the Salt Lake City area (Absolute! Restaurant & Brasserie and Dijon Bistro Provencale) as well as managed restaurants and resorts in other areas of the U.S. and in Sweden. They have most recently been in Phoenix, AZ where Staffan was Director of Food & Beverage at The Gold Canyon Golf Resort.

Kimi Eklund is the proprietor of, a new culinary and lifestyle web portal which offers users a complete virtual Scandinavian and European cooking lifestyle experience. Hundreds of recipes accompany instructional videos, shopping lists, Kimi’s cooking philosophies, tours through Sweden, historical facts and so much more.

The Eklund’s have announced that they will be incorporating kimistyle recipes into the menus at all five restaurants as well as implementing kimistyle into special events including vacation packages with Kimi Eklund which will include cooking classes, tours and more.

Another early announcement is the appointment of Anders Backlin as Executive Chef at “Creekside”, Solitude’s fine dining restaurant. Backlin previously worked with the Eklund’s at both “Absolute! Restaurant & Brasserie” and “Dijon Bistro Provencale.” He is expected to enhance “Creekside’s” already upscale menu.

“Staffan and I are delighted to be returning home to Utah,” said Kimi Eklund. “Solitude gives us an opportunity to expand the kimistyle brand while we enhance the resort both on season and off. Guests of our previous Salt Lake City restaurants will be happy to see many of those items on the menu at the restaurants at the European Village including the Chanterelle Mushroom Soup with Lingonberries and Apple-wood Smoked Bacon from “Absolute!” and the Christmas Smörgåsbord during the holidays.”

The Eklund’s are beginning immediately and many changes will be implemented by the beginning of the 2007/08 ski season.
